March 30 Day Veggie Challenge

As promised, we’re kicking off another 30 day health challenge today! Our last challenge was centered on learning about health concepts and trying out some new things. This month, we’re going to focus on our intake of fruits and vegetables.

As I mentioned in our last challenge, the goal is to eat 5 servings of vegetables and 2-3 servings of fruit each day and to make sure those fruits and vegetable are from a variety of color groups.

We all know antioxidants are great for us, but did you know that antioxidants are pigments? That’s right… Antioxidants are what give your fruits and veggies color! That’s why we want to eat the rainbow, and we want to try to eat locally-grown, in-season fruits and vegetables whenever possible. More color = more antioxidants.

The goal for the next 30 days is to eat one vegetable (or fruit) from each of the color categories every day. You might have have to branch out and try a veggie you’ve never had before, but the result will be an big increase in nutrients and antioxidants in your system, so stick with us!

If there is only one thing I could get everyone to do to be healthier, this would be it!

I’m including two documents that are also available on the Facebook group. The first is the tracker, so you can log your veggies every day. The second is a chart to help you understand the color groups. There are more veggies in each group, so it’s not an exhaustive list. It’s just to get you started.

We’ll have a check in post every five days, and I’ll share with you some of the awesome benefits of increasing your daily intake of veggies.
